Charring radicchio can create a less bitter, more flavorful approach to this winter green.
Ingredients

- 1 head radicchio
- 2 tbsp olive oil
- 1 pinch sea salt
- 1 pinch fresh cracked black pepper
- 1/4 cup shaved parmesan
Instructions
- Cut radicchio in half lengthwise and brush with olive oil.
- Charr on a grill or under a broiler until the leaves are slightly blackened.
- Top with salt, pepper, and cheese.
- Serve immediately.
